  • 1 C nonfat greek yogurt
  • 1/2 C milk (any kind)
  • 1 scoop Peppermint Bark protein powder
  • 1/4 - 1/2 tsp peppermint extract
  • 1 bag melted sugar free chocolate chips for dipping
  • 1Tbs coconut oil
  • Peppermint crumbles (optional)

1. In a blender combine greek yogurt, milk, protein powder and peppermint extract.Blend until smooth, about 30 seconds.

2. Divide the mixture into a 12-cube square ice cube tray, or try a mini muffin tin if you don’t have a square ice cube tray. 

3. Place tray in freezer and allow to freeze until hardened (at least 4 hours)

4. Once frozen, melt together the chocolate chips and 1 Tbs coconut oil.

5. Dip each frozen peppermint protein bite into the chocolate and coat thoroughly.

6. Remove the bite with a fork and place on a plate or cooling rack to harden.

7. Sprinkle with peppermint bits while the chocolate is still wet and store in the freezer in an air-tight container.
